What happens on the day?
You can choose to participate in one of the following exceptional courses:
Essential game
You will prepare a Venison carcass, as well as Rabbits and Pheasants, learning to skin and butcher them all. You will be shown quick and easy ways of preparing a Pheasant without any of the mess and hassle associated with plucking as well as fast and effective ways of getting skin off wild Rabbit. You will then cook a number of Mikes favourite game recipes and will be taught many of the vital techniques. There will be lots of tips, ideas and advice for you to take away with you and should walk away with confidence to go home and experiment more with game. The day will be rounded off with a delicious feast in the dining room.
Advanced game
This course is aimed at those of you who are already familiar with game meat, you will be shown a more restaurant style of cooking, including learning how to make unctuous stocks, pates, beautiful terrines, melt in your mouth braised stews and the art of presenting your dishes with the wow factor. You will also enjoy a sumptuous lunch, all of which have been cooked by you, all washed down with a few glasses of delicious wine.
Smoking, curing & preserving
During this course you will be shown how to cure, pickle and preserve meat, fish and vegetables as well as learning how to smoke food efficiently at home so you can always enjoy the goodness of naturally preserved ingredients. It is a simple thing to master and can transform wild food into something really quite magical. You will also get to sample some of the exquisite food you have prepared during the course.

This is a single gift experience voucher for one person
Location: Thatcham in Berkshire
The courses usually operate on Fridays or Saturdays subject to availability. Most courses run once a month and others bi-monthly, please check this with the supplier at the time of booking. Courses usually start at 10.00 and finish at approximately 16.30
You should allow approximately six and a half hours for the whole experience. The actual time spent participating is approximately five hours
It is recommended that you book at least four weeks in advance to ensure that dates are available before the expiry date listed on the voucher. All bookings are subject to availability
You will receive a full information pack and an open-dated gift voucher valid for nine months from the supplier by post. You must book and take your experience before the voucher expiry date

Public Liability Insurance is included, along with Personal Accident Insurance of up to £50,000 and Cancellation Insurance of up to £500, for the voucher holder. Details will be enclosed within your gift pack
